Method:
- In a large bowl, beat egg yolks and sugar together until light and fluffy.
- In a separate bowl, beat egg whites until they form stiff peaks.
- Add mascarpone to the beaten egg yolks and mix until well incorporated.
- Fold egg whites into the egg yolk mixture just until combined {Note: The key to this step is not to over-mix}.
- Spread layer of mascarpone mixture on bottom of serving bowl {approx 8" x 5"}.
- Sift cacao powder over mixture with mesh sieve; repeat for remaining layers.
- Pour Amaretto and espresso into shallow bowls; dip each lady finger into espresso then Amaretto and place in a single layer on top of mascarpone in a serving bowl {Note: Dip only half of each cookie—the other half should remain dry}.
- Continue layering mixtures as directed above, finishing with another layer of mascarpone; sprinkle with cacao powder before chilling it in the refrigerator for at least 1 hour or overnight.}
